MUCHGroup creates "next generation" ingredients made from 100% shiitake mushrooms. MUCHroom offers a rich, juicy, texture and deep umami flavor that takes any dish to the next level - a natural, simple and sustainable choice for professional kitchens.
Our products are made from the underutilized stems of shiitake - residues that are normally discarded. By combining this circular raw material with our own production processes, we create three versatile product groups for chefs:
MUCHtartare
The basis for a tartare, but completely plant-based. Made from shiitake instead of beef. Subtle, neutral and easy to flavor. Works both as a tartar base and as loose mushroom pieces.
Pulled MUCH
A fibrous, pulled-together texture that can be used hot, cold, grilled or baked. Ideal for bowls, wraps, pizza, buffet and banqueting.
MUCHbelly
Think pork belly, but from mushroom. A firm bite, rich texture and widely applicable - without a long list of ingredients.
